Mexican – San Fernando. Sweet, Citrus, Caramel Finish.
San Fernando is a cooperative of small-scale coffee farmers located across nine municipalities in the state of Chiapas. In total, there are 50 communities who make up San Fernando’s membership and each of these communities has on average 25 members, each of whom farms approximately 2.5 hectares of coffee.
San Fernando currently operates seedling nurseries and employs 10 technical staff to help members improve their farms. Through its renovation program, tree density has increased to 3000 trees per hectare. The cooperative also provides assistance with healthcare, education and financial services. The coffee has a light, sweet aroma and is mild and smooth with clean lemon acidity and caramel, hazelnut and citrus flavours. The body is light and there is a lingering cocoa aftertaste.
